Because he loves her.. Wolverine had his memory erased when his metal skeleton was implanted,.He had no idea who he was. He was taken in by Xavier when Jean was still pretty young.. She was the only one who could reach Wolverine (Logan). When they tried a relationship Logan was still too paranoid of trusting people and he was obsessed with the past.. It soured because Jean was ready to give him her whole life and he would only give her parts of his. Then she moved on with Scott.(Cyclops)

No, its not cuz she resembles his mother(which she dosnt). She reminds him of Rose. The first love of his life. Logan, Rose and Sabertooth grew up as kids WAY back in the day. Read the graphic novel "Origin". She has red hair and looked quite similar to Jean. Plus, Jean is a good person. So why not?
