That I can plant with seeds I mean

Green beans (bush), soybeans, lima beans, maybe some short-season tomatoes. Spinach, lettuce, beets, radishes, and many other salad type vegetables don't take long to mature (30-60 days)--they also like cooler weather, so if your growing season allows it, plant them in mid-to-late summer so that the weather will be getting cooler as they mature.

I'm not sure if you're looking for seeds or looking for a vegetable to eat but you can still plant radishes and get a bunch of them to eat. Hope that helps!

if you have 60-70 days left in the growing season where you live, you can still plant most seeds and get the harvest before frost

sure, some varieties of radishes can be harvested less than a month after planting the seeds.
