Do an experiment to determine if refined sugar and/or high fructose corn syrup affects the activity level of young children. You could go to a day care school and take four separate days where the activities are essentially the same. One day feed them sugared Cool Aide, another day Seven Up, another day water or milk, and the last day a sugar substitute. Video tape the subsequent activities. You could write background about the physiology of how the various sugars are processed in the body.

Alternatively you could have a small group of children come in in a fasting state, test their blood sugar with a glucometer. Then feed them different things...one group gets a sugar (simple carbo), another a complex carbo, another protien, and another something with most fat. Retest the blood sugar at intervals of one half hour for a total of four hours. Compile the data and you could make conclusions about the kind of breakfast that will provide the best fuel (most even blood sugar level) for young children. The biggest downside is the children get poked to test their blood sugar....eight times each, yech - maybe you could use slightly older kids, like 8 or 9 for this experiment.
