Does anyone know any good/reliable all-inclusive travel programs that we could use?

Your local travel agents should be able to show you different offers....
If not go to the spanish ones in internet...

Also Viajes Melia (the website is www.Solmelia.com) They also have a chain of hotels not just the travel agent.
All these websites are in spanish, but being a spanish teacher, I guess that should not pose a problem for you.

You could even contact them for more info through their website.

A good trip would be: stay in Madrid, visit of the city in general, El Palacio Real, and the main museums: El Prado, Doña Sofia (modern art) and Museo Thyssen. Side trips to El Escorial (half day needed), Aranjuez (half day), Toledo (full day).
And to lighten all that cultural stuff...give them a side trip to Madrids Zoo! Or the Warner Bros. Amusement Park
