I'm gonna go against the grain of the other answers (I've never heard of "tri..." whatever) as I'm not getting hung up on the number of pictures. Instead, I'd simply call it a "panoramic", which is independent definition regardless of the number of pictures; even one photo (from a special camera) can be a panoramic.

I believe the term is "triptych", although there are different spellings.

It's called a triptych. "A painting or carving consisting of three panels."
