Gas is a normal product of digestion. While gal bladder problems can cause excessive gas, having the gall bladder removed will not stop you from producing gas. Here is some great information on that embarrassing subject: http://www.webmd.com/hw/heartburn/aa113156.asp

The sound is probably from the peristalsis in your intestines.
