Stainless steel has always been my choice. It exceeds the level of corrosion resisistance offered by aluminum ( the minimum material requirement) and is far less likely to tear during installation in a mansonry chimney. The fine print is this, although you are venting gas appliances now - the 100 year old has has vented oil & maybe coal appliances in the past. The deposits they leave behind never completely leave the chimney and aluminum will not withstand their corrosion.
The answer is clearly stainless steel from a proffesional point of view.

I'd go with stainless steel, due to its corrosion resistance. Aluminum is fine if it is all you can afford. But the stainless with last longer then you'll most likely own the property.

I'd go with the stainless steel. It can withstand a greater temperature with melting/deforming
