I am sitting with the same problem as you and learned the following:
Place any suggestions, answers and requests on paper/email for security reasons because they like to deny that they were asked or requested to do/answer certain items.
On the anxious stress issues it will be difficult to control because he will have to do himself - maybe he should do a time management- or project planning course.
Incompatible boss - ja this is difficult because he/she will increase your workload as much as possible to hide their short comings - sometimes you feel to pack up and go, but years of service and jobs scarce is the factors to look at.
Try an in-house transfer if possible or ask your boss for your job description so that it will force him to see what you are suppose to do versus his requests. Evaluate yourself and find shortcomings and improve if you find some.
Please do not resign but adapt if possible - in South Africa we learned to adapt due to jobs being scarce with the affirmative action of 1 white allowed per 20 Black employees - please don't misunderstand because I am not a racist.

I don't know too many people that like their bosses. But, they got where they are for a reason and you are not going to change their personality. The only person you have control over is you. Take it from one who has been there. It is not worth it, get out and get out now. Transfer to another department or start seeking employment elsewhere. A boss will start affecting your life. You are at work at least eight hours a day. How many years can you face that?
Make a change while you are still young enough that you can. I wish you a lot of good luck. Take the risk, you will be so much happier.

I know it's hard, but you've just got to keep going unless you can get another job or something. If you can't, maybe you should take a Monday or Friday off and give yourself a 3 day weekend to just do what you and you only want to do. If you're boss really is a jerk though, tell him/her off and just quit. You should'nt have to deal with unfair crap. Or, you could go to their boss and maybe say something like, "I think my boss is treating me unfairly." then say why. Hope that helps and good luck with your boss.
