all goldfish change color through their life in fact all goldfish are born gray. If you get plain old common goldfish especially when they are small you never now what changes may take place because the breeding of these fish is not done carefully they are the fish equivalent of mutts. Just like mutts the appearance will continue to change until they are full matured. Also, remember that this may take a while a common goldfish has the potential to get almost a foot long and to live for 50 years or more.

That's weird.. ever since I was 6 I've been taking care of goldfishes. I buy them, take care of them, they die, buy more, take care of em, and etc. It's always all the colored goldfish turning into gold, not white. o_o but I think it's just they way they are. It's not a big problem.

Is the fish itself white or is it growing white stuff on it? If it's growing white stuff, it sounds like Ich. You'll need to treat with the proper medications ASAP.
If it doesn't look like anything's growing, chalk it up to the fish maturing. As the one other person pointed out, they do change colors as they grow older.
Also, I'd like to remind you to make sure they are in at least a 30-gallon tank with proper filtration. Otherwise, you're just asking for problems with ammonia/nitrites/nitrates and sickness.

If you were able to look under their scales you would see the true color of the fish.
The color stages they go through is simply genetics. If they had babies, they would more than likely go through the same cycle.
Different foods can effect how quickly it changes.. yada yada yada.. temperature, pH, the food you feed, etc.
