Yes, you have to remove it from your address book, and thats it basically. Do not add your real name to an email and people will only see your email address.

YES. In yahoo you can go to -MAIL OPTIONS, then under management select MAIL ADDRESSES. Select edit and you can change it there. It will change many of your general preferences in e mail.
