As copper helps melanin production, foods high in copper like calf liver, sesame seeds, raw nuts/cashews, raw mushrooms/crimini, cooked soybeans, barley, dried sunflower seeds, cooked tempeh, cooked garbanzo beans, and cooked navy beans are foods that you wouldn't eat if you sought to decrease melanin production.
However, cutting copper out of your diet can result in:
* Iron deficiency anemia
* Blood vessels that rupture easily
* Bone and joint problems
* Elevated LDL cholesterol and reduced HDL cholesterol levels
* Frequent infections
* Loss of hair or skin color
* Fatigue and weakness
* Difficulty breathing and irregular heart beat
