First tell your uncle about what you think about smoking. One website is nosmoking.com. He would probably say that he could not stop, so you ask him why he smokes. If he says it releives stress, gives him something to chew on, or just because it feels good he could chew on a suger-free gum or eat mints. If this doesn't work I don't know what will.

I know you love your uncle so what I am going to say may be a little painful to you. You cannot persuade anyone no matter how much you love the person to do anything he is not ready or doesn't want to do.
Your uncle has to have the motivation or desire to quit smoking.
I remember my uncle was a heavy smoker and would never think of giving it up. One day he had a heart attack and the doctor told him that if he smokes one more cigarette he will drop dead. Guess what? My uncle never smoked another cigarette and he's still alive - he's a very old man, probably 80's now.
However, I do want to say to you, if your uncle gets ready to take the first step and to try to quit smoking, you will be ready to give him all the empathy and sympathy he needs. Perhaps, you can also search the internet for information about how people give up smoking and their difficulties with this issue/habit.

Non-smokers don't get it, smoking is a personal choice! Okay, it can kill us but so can bacon! You have made it illegal to smoke almost everywhere, yet, public drinking is still just ducky. Don't give me that second hand smoke crap, if you can't stand the smoke, get outta the way, go open up a nonsmoking establishment instead of stopping us from enjoying a smoke in a place where the OWNER has no problem with it. Leave the civil rights of the owners of businesses alone and open your OWN restaurants/bars

You can't make him - he's got to want to himself, and it is his own personal life. No matter if he loves you to bits, he'll have his reasons why he keeps this habit. It's probably fear of having to suffer withdrawals, so by all means tell him you're there for him when he's ready, and if he makes any sort of sign of wishing or wanting to quit, grab that opportunity and make a plan together. Nothing you can say will make him stop
he has to want to stop on his own
My Dad stopped once he lost a friend to cancer,
sad, but sometimes that's what it takes.
