Red, just about any warm blooded mammal has haemoglobin that has an iron base and accounts for the red colour. Difference in colour only occurs in animals such as insects or spiders because they have a different base, spiders have a copper base.

Depends on what part of the pig the blood comes from. If it comes from anywhere around the neck area, it should be maroon or a very dark red. If it comes from the thorax or an appendage, it should be red and similar in colour as well as composition to human blood.
