If you're going in December and don't want to be cold then stick to the south. I would suggest a few days in Mumbai then Goa (Palolem is good for meeting other travellers, beautiful and fun). From there a short trip to Gokarna, Hindu pligrim village on the coast. You could then take a train (16 hours) to Kerala (Cochin) and see the backwaters, tea plantations. Head inland for Madurai (the most beautiful temples). Other places in the south that are fantastic are the Ajanta/Ellora caves and Hampi. I don't know how long you are going for. Once you get to March then Rajasthan further north is breathtaking - Jaiselmer, Udaipur in particular. I did six months in India a couple of years ago and had a rough idea of where I wanted to go and planned the first couple of weeks and then decided as I went along.

There are lot of beautiful places you could visit in Maharashtra. If you are interested in a history then the best place to visit would be the Ajanta and Ellora caves.For a relaxed holiday head to Mahabaleshwar/Lonavla.
