if you're using adobe acrobat reader you can use the text select tool and highlight the text you want.

If you have adobe acrobat you can use the object tool and select all the text.

You'll have to explain what you mean. PDF is a proprietary file format of Adobe, they have a free Reader you can download, but you can't change a pdf document to anything else unless you have their expensive software or you use OpenOffice.org.

Under the tools option on windows explorer. Choose folder options. The choose the type of fole extention and change it to the programe that you want to use it to open with.
