Perspective.
When you are very young, most of your experiences are "new" experiences. Change is not frightening. Quite the opposite... change represents adventure, openness to new ideas, etc. You are driven by curiosity and the need to experiment.
But when you are older, you've already made many life decisions and choices. You 've been sorting through the world as you've found it and chosen what works best for you. At this stage of your life, anything that threatens those hard-earned personal values is much more threatening.
Before you know it, you're standing there lecturing your teen-aged kids about standards of behavior and values. And they're standing there thinking that you are some petrified old stick-in-the-mud.
(Just like you felt when you were a kid!)

Perhaps it is because when you are young you still have some faith that the world can be an open and loving place where everyone has a genuine interest in the welfare of his fellow man. When you "mature" you come to the realization that no matter how loving, giving and kind you are, you are just one voice and far to small to implement the kind of change needed to bring about a happier world.

For me its the opposite, as I have gotten older I have become more liberal. I was very conservative as a child and young adult and I probably would not recognize myself as I am now. I have realized a lot of things since I was young and realized not everything is black and white. I think for most people it is because they are poor when they are young so of course they have nothing to lose but as they get older and accumulate more things and money they become more conservative. Also as you age you have more and more responsibilities put on your shoulders that tends to make you more conservative.

There's an old saying, something along the lines of
"If you aren't a liberal when you're young, you have no soul.
If you aren't a conservative when you're old, you have no brain".
That being said, there are plenty of elderly people who are far from ever convertion to conservatism.

I just went through that transition myself, in my 40's. I wish I knew. I'm guessing a higher level of maturity. Maturity is a longer process than most people think.

Perhaps when we are smaller we want to disagree with our parents and the older we get the more we realize they weren't so off base and that most likely experience and wisdom makes them smarter than us.

I know many people over 70 who are becoming more and more liberal everyday. If you think liberal is wrong, look at George Bush and where his conservatism has gotten us.

Because as you grow you acquire money and when you have money you want to protect it and your stuff. You stop caring about the world and start caring about yourself and your stuff.
Conservative is the party for people with stuff and people who like to shoot things.

Spiritual maturity. You start to realize that you only obtain certain blessings by obedience to certain laws, not by bending or rewriting the laws.
