I start with lunch (or breakfast) at Denny's in the center of the Strip; reasonably priced good food, and a direct view of the volcano across the street at The Mirage! The Steakhouse at Circus Circus gets rave reviews for great food and reasonable prices. Also try the food at the Sports Book at Harrah's. Tasty and reasonably priced.
Not all buffets are cheap however. The further you go down the Strip towards Tremont St., the cheaper the food, but still very good.
There are so very many good reasonably priced places to eat you wouldn't believe it. Ask the locals and/or fellow travelers their favorites. Most are very happy to share information.

A great place to eat for Mediterranean food is off of Maryland Parkway and Flamingo (5 minutes off of the strip.) It is called Daily Chicken and Gyros. It is amazing, and the prices are good! Order the beef shawerma or the gyros.

I agree with Faith C i have lived in Vegas for more than 10 years now and i go to Daily Chicken and Gyros AT LEAST once a week it has the best food, best menu choices, and BEST prices for awesome food i definitely recommend you try it out.

sams town has a very good buffet and not exspensive
it is my second favorite
the orleans has very good food and they are reasonable
good buffet and cafe

it isnt like it sued to be anymore---there is almsot no where cheap..try dennys or in-n out burger
