Chromium is added to the steel. This actually provides a hard oxidation layer. So basically, there is already a layer of oxide (kinda like rust), but it doesn't flake off like the redish type rust you might see on your car. This layer actually protects the rest of the material, by keeping other impurities from reacting with the interior (or exterior).

its heated to a higher temperature w/ added chromium to emliminate more impurities. resists oxidation(rust), stronger, etc
