First off, take into consideration the interests of those you wish to converse with. If you cannot figure out the relative interests, strike up a conversation involving a subject everyone can relate to. Perhaps, what you really should be conversing about is what their interests -are-. Once you know the people, or person, it will be easy. Before knowing, just ask questions, or introduce yourself further.

Sure, gas prices, Iraq, the latest movie concept like Click, anything about space and stars and rockets (people eat it up. Did you know that if you knew the right trajectory, you could throw a ball out on the surface of the moon, and it would travel all the way around and meet you from the other side? *lol*)
A great book say, if you were interested in just having rare and random facts is the book by Astronaut Mike Mullane, Do Your Ears Pop In Space and 500 other questions.
Watching interesting shows on Discovery like Mythbusters is a SURE way to make conversation. Who hasn't wondered before if you get better gas mileage with your windows down? Or if talking to your plants really works?
You know what people really enjoy? Great story telling. That time you and a friend went to Mexico, and he decided to jump in the whirlpool and had to get pulled out by the water authorities? Everyone's had something interesting happen to them - it's all in the way you draw the picture for them. (Here's a hint: don't dominate the conversation about only yourself and your own experiences, and don't get bogged down in too many details that don't add to the story.)
If all else fails, ask the person about THEMselves? What kinds of things are they interested in? What book did they read last? Where did they go for their last vacation? What's their favorite animal? What shows are they watching on TV? What's their dream house look like? If they could go anywhere in the world, where would it be? If they could have their dream job, what would it be? What was it like growing up for them? What's their family like? (Don't pry but most people feel appreciated when the spot light is turned on them for a moment.) And so on and so forth.
Sometimes listening is just as attractive as speaking! Best wishes.

The list is endless, Television shows, movies, music, books, other people, the weather, clothing, just try to stir clear of Religion and Politics, they tend to be hot subjects. Save them for much later, or never.
