Do Amelia and Zel get together a the end of all the Slayers series, what about Gourry and Lina?

No. The original creator of the Slayers series was actually very upset about the romance that the animators put in. He never intended there to be pairings between any of the characters. So at the series conclusion there was nothing definite for any of the characters. (Granted, that's good in my opinion, I don't really care for Amelia at all)
