Salsa and Mambo are the same dance (at the beginner level, anyway), with some minor stylistic variations. Salsa is the club variant, and Mambo is the ballroom variant.

So you can look for classes under either name. A lot of studios give packages of salsa lessons just because it's a big dance on some club circuits. Or you can look for Mambo lessons with studios oriented more toward formal ballroom. If you want to mail-order instructional DVDs (I recommend www.dancevision.com), look for either name.

Check your yellow pages under "dancing" for studios and call around or check their websites. Also, ballrooms sometimes schedule a cheap series of group classes with independent instructors. (And there are usually free classes at the beginning of every dance night) You can look ballrooms up in the yellow pages and then check their website for schedules.

If the yellow pages don't yield much, go to the website of a studio and then look around for links to a local dance newsletter. I would think there's a lot available in Central NJ.

Go head out into clubs,,,Im sure there is someone there that is willing to help and teach you,,,Thats how I learned here in Houston. Just remark on how well they dance,,and ask if they can help you out!
