Sure you can, because the topology is not related to the medium.
What it will depend on is the type of hardware you have - the question is, will the hardware that you are using support fiber or not? Typically fiber is not used to go out to client workstations, instead it is used between interconnects - although sometimes it it run directly to servers. But usually it is used to connect between buildings, or floors of a building, or just between different wiring closets.

fiber can be used for ethernet networks. you just need the right equipment which can run on the expensive side.

there is also fddi and sonet as commen uses for fiber
