There have been a number of covers of the song, particluarly by country singers: Reba McEntire; Mindy Smith; Sherry Austin, Rhonda Vincent and Sherry Austin (whose arrangment is slightly heavier than the original version) among them. It's a beautiful song, and it's hard to cover it badly.
Queen Adreena did a very heavy, industrial version of the song which is well worth checking out;
Strawberry Switchblade did a synthasizer, eighties, dark wave version;
I haven't heard the White Stripes version, but I should imagine it's done in their trademark style;
Wikipedia also informs us that it's been covered by One Dove, a dance band; Alexander Veljanov a Macedonian-German; Sisters of Mercy, the fairy gothmothers of eighties goth; and Leyla Foroohar, an Iranian lass.

It was the White Stripes. There was a single of it released in Britain and Ireland and it was on their live DVD 'Under Blackpool Lights'.
