My understanding is that a "shot on goal" is a kick/header than must be blocked by the goalie or that hits the post, whereas a "shot" is anything that can be construed as being an intent to score. I'd love the true definition. What happens if a defender blocks it? Is that a "shot on goal"?

Hockey makes a clear distinction: If the goaltender does not make a save or the puck does not go in the net, it is not counted as a shot on goal. Hockey doesn't keep a separate stat for shots that do not go on goal.

If its similar to hockey, then a shot is when someone kicks/shoots in the general direction of the net(not a pass), where a shot on goal is near the goal, like a possible scoring chance
