Several sites for your consideration.... Knitting has been done mostly for personal items for centuries.. During the American Civil war, WW1 and WW2 women were asked to make socks for soldiers. With the advent of industrial machines for knitting, hand knitting lost popularity for a while but is now under a resurgence.... Depending on which historic era you are interested in there is information abounding......
Good luck

If you want to see some interesting samples of knitting through the years, check out the Victoria & Albert Museum's website.

I've heard that this book is not nearly as boring as the title would lead you to believe:
No Idle Hands : The Social History of American Knitting
http://www.amazon.com/gp/product/0345362535/sr=8-1/qid=1151642164/ref=sr_1_1/102-0628980-9354507?ie=UTF8
I've almost checked it out of my library a few times, but have passed it up for pattern books....
