Its made of sticky rice i think and is like baked but ,

try this:

Suman

cups sweet rice (soaked for 30 minutes, then washed and drained)
5 cups coconut milk
3 teaspoons salt
2 tablespoons brown sugar

For a different touch, I added 3 cinnamon sticks (1.5-inch pieces) and 2-3 teaspoons vanilla. Bring to a boil then reduce to a simmer, uncovered, stirring occasionally. Cook until rice absorbs all liquid, approx. 15-20 minutes. Cool slightly and set aside.

SUMAN

Ingredients:
- 3 c glutinous rice
- 3 tsp salt
- 2 c thick coconut milk



Procedure:

1.Soak glutinous rice in water until grains are swollen.
2.Wash rice and drain.
3.Add salt and coconut milk.
4.Fill "buri" tube containers 2/3 full.
5.Close opening of the tube by pinning together the ends with a piece of bamboo pick (about 1/3 the size of a toothpick).
6.Tie each suman with strips of buri.
7.Arrange in a deep kettle with water and cover container.
8.Boil the suman for two hours or until cooked.
9.Serve with sugar, ripe mangoes and/or hot chocolate beverage.

Yes its suman, but sometimes its called biko.

You need:
glutinous rice or malagkit
brown sugar
gata or coconut milk (first extraction)

You cooked the malagkit or rice, like cooking your plain rice. In separate pan, bring to boil the gata, until it becomes oil and the latik will be form, just don't overcooked it, it will taste bad, latik will be in not so dark brown color.

in separate pan, cook the brown sugar with water (enough to cover ur cooked rice), and bring to boil, when already boiling, mix the cooked rice on carmelized water, and please taste it if ur sweetness is okay. when done, put the mixture to a native bilao, or any bake pan, and put the latik as toppings.

added tips:
in bicol, instead of water with sugar, they use gata (2nd extraction = pure coconut milk with water), with sugar and put the cooked rice.

Halo-Halo (Filipino Dessert)

Refreshing, exotic, and fun! Great for a party. Don't let the eclectic mixture of ingredients scare you away.

1 gallon vanilla ice cream
2 bananas, sliced and quartered
1 honeydew melon, balled
1 cantaloupe, balled
1 papaya, balled
1 young coconut, shredded (fresh or frozen)
1/2 cup tapioca
1 package strawberry Jell-O gelatin dessert
8 cups crushed ice

40 servings 240 oz Change size or US/metric

1 hour 30 minutes 1 hr prep

Cook tapioca until pearls become translucent (add tapioca to boiling water, lower heat to medium, watch for 15 minutes or more, stirring occasionally).

Rinse tapioca in cool water (careful, it's sticky) and set aside.
Prepare Jell-O using half of the water called for and refrigerate until stiff.

Put the fruit (except bananas) and coconut into drink cooler (for party) or large bowl (to serve with a meal).

Cut Jell-O into 1/2" squares.

Add bananas, tapioca, and Jell-O to fruit mixture.

Prepare ice cream by emptying container into a large bowl and smoothing into paste (i. e. use potato masher, hands, etc.)

Scoop ice cream into fruit mixture.

Cover fruit mixture with crushed ice.

If using cooler, cover with lid.

Wait 30 minutes and stir to combine all ingredients (including ice) well.

Serve with ladle in paper cups with spoons.
(lasts 5 hours in cooler--stir before each serving).

Leftovers can be refrigerated for the next day.

mix all together in a pot over medium heat stir until thickened, make sure you stir so the bottom doesn;t burn

sorry i don't have the exact measurements right now..but those five ingredients are all u need
