Try either of Jonathan Safran Foer's books - "Extremely Loud and Incredibly Close" or "Everything is Illuminated". Judging from your book list, I think you'll enjoy them both.
I also absolutely adore "An Unexpected Light" - I think it's by Jason Scott. It's about a man's travels through Afghanistan. Maybe you're not into travelogues, but this is a stunningly beautiful and well-told story.
Someone else recommended Richard Brautigan. In Watermelon Sugar is a great read, but if you've never read anything by him before I highly recommend "A Confederate General in Big Sur". It's one of my all-time favorites.
"Treasure Island" by Robert Louis Stevenson
"The Name of the Rose" by Umberto Eco

Try these:
"Bel Canto" by Ann Patchett (give it a try it's the story of a small South American country hosting a party for a Japanese business man in hopes of gaining a contract. They have invited his favorite opera singer to the party. Things take a turn when a group of guerrillas take over thinking the president is there. It's the dynamics of captor and captive and how things evolve the longer they are stuck in the house.)
"The Tenant of Wildfell Hall" by Ann Bronte (she used her brother as the model for Mr. Aurhur Huntingdon)
and if you like mysteries you might try
"The Crocodile on the Sandbank" by Elizabeth Peters

You could try She's Come Undone. I really hated Wuthering Heights, but I loved Jane Eyre. Have you read any Jane Austen? There's a book called Ex-Libris that is really good.
