Most teeth used in jewelry are fossilized teeth obtained from mining sites, river beds, and diving expeditions. Plenty of shark teeth wash ashore on beaches all over the world, but I don't think that's where the majority of the teeth for jewelry comes from.
You can perform a Yahoo! search for "shark teeth jewelry" and find many commercial sites that post their sources for shark teeth. Here are a few examples:

Sharks loose their teeth constantly and they are replaced by new ones ... because of this there are millions and millions of sharks teeth that wash up on shores all over the world. People collect them and make stuff from them. Next time you go to the beech search a bit and I will bet you will find some.

If you are living in Florida, just walk the canal banks after a rain and you can find them there. I have found 2 to 3 inch ones. I believe they were fossilized.
