I recently moved to a house - fairly big (2000sqft). Unfortunately, whenever anyone opens a tap or the shower in the bathrooms or the kitchen noise carries across the entire house. What could be the problem? Water pressure?

that is called a water hammer. it means you have air bubbles in your water lines. find out where the main water shutoff is for your house and turn it off. then go to every tap in the house and open it wide. then slowly turn the main water back on. it will purge the air bubbles from your system and should solve the noise problem

What kind of noise ?

If 'knocking' in the pipes, then it's an air lock - open all taps and let the water run, hopefully this will clear the air bubble in the system.

Otherwise - sound insulation ?

Check your main water inlet valve right next to your water meter, if the house was empty for a time it may have been turned off and not fully opened back up. You may also trace your water lines to look for loose brackets that may be allowing vibration and add a few new ones here and there , very easily done.
