I don't know if there is Junior Achievement where you live, but it's a really good program. I am only familiar with it on the elementary school level but they do have high school programs. Check out their site: http://www.ja.org/programs/programs_high_overview.shtml

I also found Shorewood High School, 1701 East Capitol Drive, Shorewood WI 53211 (414) 963-6920. They have classroom restaurant simulations in their Foods 3 class, they may be nice enough to tell you how they do it.

Yes i did one when i was in school. U have them pick out a name, pick design of restaurant,pick out tiles and wallpaper for their restaurant, bring in samples to class, (they can get them from home depot or lowes) have them make a small business plan of what type of food they are selling, what prices they will sell it for, what are there target consumers, etc..have them make up a menu from this. They can present it in class or just hand it in for a grade. Good luck!
