I am a professional musician and high school band director.
If you're talking about musicians, there is not a huge job market, but there are a few steady-income jobs still left out there. The ideal position is the symphony orchestra position, but most people are unable to secure a position like this until later in life, because its very competitive.
Many people who wish to have an actual career performing choose to join the bands of the US Armed Forces. This is one of the few venues where someone can earn a living performing in this way. The other main job title is what I do, which is teaching as a music educator in public school. I suspect that other performing arts will have similar job markets, but I doubt there are many drama experts in the US Army.

The main roles you would find are performers, but there are many others- you have directors/producers, managers, technicians, people who work behind the scenes, tuners, recording technicians, costumers, set builders, lighting/audio technicians. Probably more....
