Just to supplement what my friends have said above, a typical dhaba has atleast one big earthen oven called "tandoor", has a prominent row of cooking utensils - Pateelas - displayed quite shining at the front top, do serve tandoori rotis and tandoori paranthas -plain or stuffed - and always have Dal (Makhni or not).
And these dhaba may have little variation in different regions of India but can easily be identified / recoganised.
To see their success, even many five star hotels, particularly in North India have a restaurant in their premises by somewhat similar name or appearance as Dhaba.

Arre oh puttar ! ['Oh, youngster !', in Punjabi]
The 'dhaba' is a roadside eating place, found along the National Highways in India, where generous helpings of cheap, tasty and nourishing food are served to travellers [mostly truck drivers, but a lot of those driving their own 2/4 wheelers, as well !] - who have to sit in the open air on ethnic bamboo-cots, and relish these repasts, that are often fit for kings/queens !
Most of these 'dhabas' are owned and operated by Sardar-jis [Singhs] of your own clan - some of whom have been in the same trade for over 5 generations, or more !
