....and I don't mean the obvious differences between electric, acoustic & bass. I'm wondering why some guitars are a few hundred bucks and some are a few thousand.

Really cheap guitars are hard to tune and keep in tune.

Also a quality guitar has solid wood, and good electronics, and is stable in most weather.

You get what you pay for.....although...

Mainly the guitar player will be the difference.

Although a good guitar will help...good wood, well made but a good guitar player can make a box with rubber bands sound good.

The kind of wood being used as a sound board is very crucial in producing good sound . The quality of workmanship that went into it is very much a factor too. Guitar designs are constantly evolving and prices vary largely because of these.

quality of the production...
guitars are handcrafted and the ones you see that are thousands like Gibson, etc. have people spending lots of time and effort to make it quality...whereas the Epiphone versions (also made by Gibson) are just assembled as normal.
The actual value of the guitar doesnt differ that much in quality but you pay mostly for the labor
