Screw a VW when looking for a kit car. The world's best kit car is the Pontiac Fiero. You will find pretty much any exotic Euro body kit for it. The only downside is that it is rear engine, so if you are particularly looking for a type of hot rod kit, that won't do you any good.
On the other hand, you can buy fully built frames and bodies for them at the sites above. The main thing about kit cars is that they are most admired due to the work the owner put into them to make them look a certain way.
Whatever you end up doing, just know that you will end up spending a lot of time fabricating (which I think is fun, and worth it).
