Go to the Apple River and take an intertube float. I used to live in Minneapolis and we'd do the Apple River intertube ride 2-3 times a year. It's a gas and not horribly expensive. Take you a cooler and your drinks, and don't forget the ziploc bags for things you want to keep dry. You can usually do two floats in a day (about a 4 hour course). You park at the main outlet and a bus carries you upstream and you float back down to the parking area. Used to be all included in the tube rental price.
