My favs are the Chicken Pox with the hooker messing with the parents lipstick and toothbrushes so they would get hurpes. Or the one where they are Ninjas and they hit Butters in the eye with a ninja star..... and took him to the vet.

My favorite is the one where Cartman feeds that kid his own parents at the chili cookoff because he tricked Cartman out of some small amount of money ($7?). I just love the scene when the kid is crying and puking and Cartman is licking his face saying "oh, your tears taste so good!"
Although, I also love the one where Butters falls in love with the girl at Raisins. Classic!
edit: Now I've been reading other people's answers...I, like John below, also love the one where Cartman goes on Maury to win the "prize"..."I digitally reanimated Jabba the Hut into the original Star Wars! I do what I want!"

My favorite is an old one where the parents of south park freak out about the safety of their kids and decide to build a wall around the town, so they go to the only Chinese guy around and make HIM build it. "GADDAM MONGORIANS! REAVE MY CHITTY WALL ARONE!"
so offensive. Meanwhile the kids are holed up outside of town (after having run away) and team up with the mongolians. It's great, insulting, but horribly funny.
South Park is the best social commentary on tv.
I found it! It was Season 6 "Child Abduction Is Not Funny"

Osama Bin Laden Has Farty Pants- The perfect response to what happened on 9/11, especially the little tribute that Matt and Trey threw in to Looney Tunes (Cartman/Osama scene that's much like Bugs Bunny's old scenes with Elmer Fudd).
