Copper has been the most common used pipe for years. Due to skyrocketing prices on copper more plumbers are switching to pex and kytec and a few other newer types of piping. P.v.c. is rarely used by professionals,it does have it's place,but should never be used in the interior of a home or as a hot water line. Yard service is acceptable. C.p.v.c. can be used on hot or cold,but is not really a professionals choice.

Most "buildings" (i.e. 3 or more stories tall) will use galvanized pipe. Some commerial buildings will use galvanized pipe or copper. Most older housing applications will be copper or galvanized or in very old houses soldered lead pipe. But interior use of pvc is increasing rapidly, especially in new homes. It is way easier to install and repair.

Residential Contractors use mostly CPVC, copper tube. P.E.X is becoming more popular, too. Galvanized steel isn't installed anymore in residential.

Copper Pro's: Sturdy, looks good if done correctly, durable/ rigid, stronger joints
Copper Con's: Corrodes (especially if the installer used too much flux), more expensive, longer assembly time
CPVC Pro's: cheaper, faster assembly, doesn't corrode
CPVC Con's: not sturdy, doesn't look as nice (opinion), joints aren't as strong

Depends on the code in your area. Some require copper, others galvanized and some will allow cpvc or plastic.

Supply water is piped in copper plumbing. This is what is used in new building. it is against code use plastic pipe in any commercial buildings.
