Just tell them you don't want to hurt their feeling or lie to them but you want to be honest so you're going to tell them the truth and just tell them that you just really don't want to do what ever it is.

If you don't tell the truth at the beginning you will end up in a bigger bother than before so it is wish to always tell the trust and remain trustworthy, it is a good thing to have.

depends on the situation you're in. If you don't have to answer the questions, then you don't have address it at all, just change the subject. But honesty is always the best way around.
