It depends what way you're heading. If you're working a cow it's the cow that leads the dance so to speak. The horse always faces the cow. In a stock horse class coming down the fence he'd roll back towards the cow to turn her...so it would depend on which side the fence was on.

depends where is the cow going or looking like it wants to go? working a cow means controlling her and preventing her from rejoining the herd. you need to stay in front of the cow, so you should turn towards where the cow sees a way back to the herd.
