because your eyes roll back into your head an dyour eyelids protect your eyes so crap doesnt get in them

There are two reasons. Firstly, it would be very difficult to sleep with your eyes or other senses still working. Secondly, to protect your eyes.

The dry crud in the corner of your eyes in the morning is protein rich evaporated lubricating liquid.
