Kate is normally a nickname for Katherine, so Katie, Kat, and all the other nicknames for Katherine would work. But don't forget that a nickname does not have to be derived from one's regular name, and given that she has a nice, short name to begin with, why not something that says something about her personality, like Sunshine, Sparkle or Giggles; Professor or Brainiac; Gem or Belle; Tigger (for bounce) or Eeyore (for gloom).
