yeah...let me tell you! first, the enzyme invertase in yeast converts sugar into glucose and fructose ( both are isomers).
then the products of the above reaction (glucose and fructose) are converted into ethanol in the presence of another enzyme in yeast called as zymase.these reactions are carried out in about 20-30 degree celcius temp.
equations:
C12H22O11 in the presence of invertase gives C6H12 O6 +C6H12O6 (glucose and fructose)
the other reaction:
C6H12O6 in the presence of zymase gives 2C2H5OH + 2H20

I not know much on this. But, here how I explain it. The yeast feeds on the sugar and begins to Fart. This is the gas that make Bread Rise to bake. In the making of wine it does the same only as the Yeast produces the gas it interacts with the Sugar and Fruit to produce Alcohol. Actually better wine is made without Yeast. The Yeast just speeds up the Fermentation process.

fermentation converts sugars to alcohol, when all "most" sugars have been converted, fermentation stops!
