As mentioned, depends on your fish. Most can survive at neutral (7.0) but the more specialised you go the more they differ. Generally S. American fish (Angels, discus etc) are happier at 6.5, and African fish (Kribs, malawi cichlids) are happier around 8 - 8.5.

Ray's got the right answer, but if you're careful about acclimating them and avoid sudden changes, most fish can live in 6-8 pH. My water sits at about 8, and I've been keeping bettas, dwarf puffers, and tetras (obviously not in the same tank!) for a while.

Depends upon the fish, and the size. Call your local pet store with your info and ask them.
