I found the easiest way for me to learn was through trial and error.
There are many different types of sewing. Which in particular are you interested in? dress making? cross stitch? Embroidery?

If you are talking about dress making, get yourself a very basic dress pattern, read the instructions and just go for it. However if you want it to be really sturdy invest in a good sewing machine. Most these days have so many different stitches that it is all there for you at the press of a foot!
Pop to a charity shop and purchase a large piece of material to practice on.

If you are talking about embroidery, most haberdashery places have beginners packs. They will teach you the basics and will usually have a pattern for you to practice on.

Cross stitch is one of the easiest needle crafts. As long as you remember to keep all stitches going the same way. Again, most haberdashery outlets will have kits for all stages.... beginner to advanced.

I used to do a lot of needlework and I found it incredibly therapeutic, and I was self taught. I made a lot of mistakes but I learnt from them and am now able to make clothes and costumes for my children and myself.

Good luck x

I learned how to sew in school, I think junior high. My mother sewed her whole life and I've also learned by watching her. I was going to take some advanced sewing classes though. A lot of the time your local highschool will offer some adult education classes. They almost ALWAYS offer sewing, beginning and advanced. They are usually really affordable and they have them at night in case you work a day job.

You could probably find some good books in a library that would teach you the fundaments, if you want to advance past that, then I'd suggest some classes, but many a woman has taught herself.
