Because the church said so in A.D. 325. The date of Easter is determined according to the lunar calendar, while the date of Christmas is fixed on the solar calendar. Before 325, there was no official celebration of the birth of Christ, and Easter was celebrated by some Christians on Passover (a lunar holiday) and by others the following Sunday.
the holiday was celebrated on the Sunday following the first full moon after March 21, the start of spring.

Easter Sunday doesn't always fall on the same month and day for a one main reason. Easter was created to ease arguments between the christains and pageans under Constantine's reign. Easter, which the Saviour, is on the first sunday, after the first full moon, after the vernal equinox, making it on a different day every year, (the pagean connection is the pattern of the moon and equinox)

It always is in April. It has to line up with pass over on the Jewish calender. Which is the 3 weekend of the month. It is the death and resurrection of Christ.(Good friday and Easter Monday) I believe it was Constantine in around the 350ad that permitted Easter to be celebrated and the whole bunny thing is for the pagans. So no its not really about bunny's and chocolate.
