If you want a delicious paelha go to Picasso restaurant. It is right at downtown San Jose.

The trendiest spot right now in the San Jose area is Santana Row. It features many upscale shops (Gucci, Burberry, etc) and restaurants.
The resaturants that are the trendiest are Sino (new Asian fusion), www.sinorestaurant.com and Blowfish which is sushi with techno music and super hip crowd www.blowfishsushi.com/ . Then there's Left Bank, a french cuisine restaurant and Straits, a bar that also serves really good food www.straitsrestaurants.com. They are super trendy at the moment.
The other area that is still goin on is downtown San Jose. We go to Smoke which is Hawaiian food with a DJ, dancefloor and really cool private dining areas. We sometimes take clients there.

try Original Joe's in downtown San Jose, behind the San Jose Convention Center. Food is excellent. Italian and American. Entrees are around $15 to $25. Place is open very late and often it is packed so you know food is good.
We always get Veal Parmigana, Veal Scallopine or Chicken Cacciatore with side of spaghetti or ravioli. The spaghetti sauce is the best we've ever had - a very deep flavor. They won't let us know what they put in it.

It's true that Santana Row is the trendiest place to go in San Jose right now. Lots of good restaurants & a cool atmosphere. go to http://www.santanarow.com/dining/ to check out all of the restaurants & find the type of food/atmosphere you're looking for. We like California Bistro, Left Bank, Blowfish Sushi, El Jardin Tequila Bar & Restaurant, Maggiano's, & Rosie McCann's. Just beware that it has gotten so popular that you need to make reservations at many restaurants in advance, especially if you have a group of 6 or more. Thursday through Saturday nights are busiest.

Too bad you're only interested in the trendy places (and I don't know what 'cache' means in this context). I prefer down-home or mom-and-pop types of eateries, so if you wanted recommendations for those, I'd be glad to help you. :)
