I assume you are asking about electric guitars? Accoustics are a different kettle of fish....

I'm not up-to-date but I used to be pretty active in the 80s. At that time, and for many years before that, the most popular production guitars were probably the Fender Stratocaster and the Gibson Les Paul.

But even in the 80s, a lot of serious guitarists were getting custom guitars built for them or building them themselves in some cases.

There are many. It all depends on the style of music, etc. Then you want to figure out acoustic or electric.
If you are going only with rock, then here are a few:
Electric:
Gibson, Fender, PRS, Washburn, Ibanez

Acoustic:
Taylor (I own a 714ce...AWESOME GUITAR), Martin, Gibson, Takamine, Lowden, Lanjeans, and the best acoustic guitar of all...Olson.

Fneder or for the bands that have the money and want to look beter they will use Gibson! Gibson is the best guitar brand out there.

in rock you can make lists of guitarist that either play a gibson les paul or a fender stratocaster
les paul have that deep heavy sound signature with the duel humbucker pick-ups
strats were higher tinier guitars signature with the single coil pick-ups

It's a tie between Gibson and Fender. Hamer isn't no slouch, either. For bass: Rickenbacker's wicked.
