Here's a step-by-step:
http://docs.info.apple.com/article.html?artnum=60940

How to delete songs or playlists manually:

Open iTunes.
Select iPod in the iTunes source list.

Select the song or playlist you want to delete from iPod. Deleting a playlist or deleting a song from a playlist will not remove song from iPod.

From the Edit menu, choose Clear or press Delete.
Click Yes if a dialog box appears. The song or playlist is deleted from iPod.

Tip: Manually deleting a song or playlist from iPod does not delete the song or playlist from iTunes.

Deleting a song from a playlist does not remove the song from the iPod itself. Select iPod in the iTunes source list and locate the song you want to delete.

Go to iTunes options and check the option that says "Do not copy unchecked songs" or something to that effect. Then if a song is unchecked in your playlist, it won't be copied over to your ipod.

I dont know if you can. I would make a seperate playlist that you can modify. The automatic playlist are automatic for a reason. You cant change it. At least to my knowledge, you cant.
