Has to be Dookie. Although American Idiot received renowned recognition, it's just a different style of music that's not really Greenday to me. It's still a solid album though.

Dookie, because during this album (and others before and after it up untill AI) Greenday did what they do best, write simple catchy 3 chord pop tunes.
