How can they stay good on the shelf, unrefrigerated, but sudenly they know they have been purchased and start to detiriorate?

The bag they are packaged in is usually vacuum sealed and/or nitrogen flushed to keep them fresh on the shelves. Once you openn the bag, that protection is lost so you need to refrigerate them once they are opened. And they will eventually deteriorate in an unopened package too. (Makes me wonder about Velveeta though....cheese that can sit on a shelf for months, hmmmmmmm) No wonder so many use it for fish bait!

huh...i never noticed...that is a good question, my guess, they ran out of refrigerator space in the store so they hope you buy them fast. LoL

It's when they are opened that they deteriorate.
